From the world-renowned Finca El Paraíso, high in the mountains of Cauca, Colombia, where brothers Diego and Alexander Bermúdez continue to push the boundaries of coffee processing and flavour. Cool mountain temperatures, high elevation, and rich volcanic soils have helped make El Paraíso one of the most influential farms in modern specialty coffee.

This lot uses Pink Bourbon, a celebrated Colombian varietal prized for its vibrant acidity, floral aromatics, and elegant structure.

Thermal Shock Innovation

At El Paraíso, processing is approached with a precision more common to fine wine and advanced fermentation science. Following controlled fermentation with carefully selected microbial cultures, the coffee is exposed to rapid hot and cold water treatments that halt fermentation while preserving vibrant fruit compounds and acidity. It is then dried in a controlled, dehumidified environment to protect clarity, sweetness, and cup stability.

Why It Tastes So Peachy

Pink Bourbon is naturally known for floral aromatics, bright acidity, and elegant sweetness. Through carefully managed fermentation, the Bermúdez family enhances the fruit esters and aromatic compounds already present in the coffee, amplifying notes of ripe peach, pink lemonade, and tropical fruit.

In the Cup

An unmistakable peach-forward cup layered with pink lemonade, tropical yellow fruit, caramel sweetness, and soft floral undertones. A creamy body and bright lactic acidity create a vibrant yet balanced experience, with a prolonged fruit finish that lingers long after the final sip.

Roasted light (1/5) — the cultivar does the work. Brew it slow; pour-over or AeroPress is where it shines.
