It is grown on the Daye Bensa farm at 1,900 to 2,400 metres above sea level, where the cherries ripen slowly under a natural forest canopy in volcanic soil.\u003c\/p\u003e\u003cp\u003eSidama is one of Ethiopia's most celebrated coffee zones, and wild heirloom varieties have grown here for centuries. High altitude, volcanic earth and cool highland air give the fruit time to mature slowly, and that slow ripening is what builds the layered, fruit driven flavour in the cup. This is more than a coffee region. It is where coffee began.\u003c\/p\u003e\u003ch4\u003eSun dried on raised beds\u003c\/h4\u003e\u003cp\u003eThis is a natural process coffee. The cherries are hand picked at peak ripeness and dried whole, with the seed still inside the fruit, for 14 to 18 days on raised African beds under the Ethiopian sun. All that time with the fruit is where the intense berry sweetness and the almost dessert like depth come from. That fermentation lifts the fruit esters and aromatic compounds already in the coffee and pushes ripe peach, pink lemonade and tropical fruit to the front.\u003c\/p\u003e\u003ch4\u003eThermal Shock\u003c\/h4\u003e\u003cp\u003eThen comes Thermal Shock, the farm's own process. When the fermentation reaches its ideal point, the coffee gets rapid hot and cold water treatments that stop it right there and hold on to those bright fruit compounds and that lively acidity.
