The Quality Assurance Manager is responsible for the consistent excellence of every cup of coffee served at Analog Café’s. Our Quality Assurance Manager is the quintessential coffee connoisseur who is as passionate about coffee as they are the overall coffee experience. They are the key resource for coffee quality at Analog.

Areas of Responsibility
·       Quality Assurance

o   Key resource to Café Managers and team members, working alongside them to educate and encourage the highest quality of Analog products.

o   Ensure Analog products meet expected quality standards and consistency by conducting quality reviews and testing at each Analog café. Provide Café team members feedback and encouragement to continuously improve their skills.

o   Develop and document Analog product quality standards and procedures.

o   Collaborate with the Quality Assurance Manager at Fratello to assist in the constant improvement of all roast profiles.

o   Act as Analog “Ambassador” at regional coffee events such as Barista Competition, Coffee Association of Canada and Specialty Coffee Association of America (SCAA) conventions, as necessary.

o   Create and maintain Café equipment Preventative Maintenance standards and procedures.

o   Maintain equipment and ensure equipment supplies are available at all Café’s as required for preventative maintenance needs. Schedule preventative maintenance and report status and discrepancies to Café Managers.

·       Coffee Knowledge Training

o   Design and develop training materials, workshops and communications that support and improve overall coffee knowledge of Café team members.

o   Coordinate with Café Managers to facilitate regular training sessions and follow up with them to ensure all training materials are up to date.

o   Coordinate Train-the-Trainer sessions and regular meetings with Café trainers to ensure the consistent execution of Analog product quality standards and procedures.

o   Proactively recommend and implement improvements to product quality standards and procedures. Maintain and update training materials to reflect continuous improvements.

o   Design, write and distribute regular communications, i.e. newsletters, to Café team members, highlighting best practices and changes, recipes, new coffees and other information as required.

o   Present quality assurance updates and information at regular Café Manager meetings. Maintain a close working relationship with the management team.

o   Coordinate with Café Mangers and District Managers to ensure weekly and monthly scheduling of training and quality meetings meet the needs of the Café’s.

Experience and Qualifications
You’re a great fit if you have:

·       3+ years of experience in retail or hospitality or equivalent experience.

·       1+ year of specialized quality assurance responsibilities.

·       Experienced trainer, assisting individuals and/or teams to learn new skills or processes.

·       Passion for exceptional quality of products and/or services.

·       Strong verbal and written communication skills.

·       Excellent collaborator and team player.

·       Demonstrates effective time management.

·       Available to work a flexible schedule to meet the needs of the business; may require weekends and evenings

·       Proficiency in using Microsoft Word, Excel, Outlook and POS systems.

·       Minimum High School education.

Community Bakehouse announced for landmark Calgary location

Corbeaux Bakehouse to open this September under award-winning US chef Keith Luce 


Calgary, AB, May 2, 2014… Ending at least part of the speculation about what will take over the landmark Melrose Cafe & Bar space, the Calgary brothers behind Fratello Coffee Roasters and Analog Cafes, Chris and Russ Prefontaine, announced today their newest venture will open this September in the former restaurant and patio space.

More than just a bakery, Corbeaux Bakehouse will offer exceptional breads, world-class pastries and a rotating menu inspired by only the finest ingredients, with everything crafted in-house.  The culinary team will be led by award winning and seasoned chef Keith Luce who eagerly accepted the Prefontaine’s offer to move to Canada with his family to be part of Calgary’s culinary community.

Luce’s resume and career accolades are impressive to say the least.  He’s been recognized by the prestigious James Beard Foundation as a Rising Star Chef Winner and Best New Restaurant Nominee, Food & Wine magazine has recognized him as Best Chef and he was even appointed to the United States Culinary Diplomatic Corps to name only but a few of his accomplishments.  However, it was his approachable charm and excitement about doing something new and noteworthy in Calgary that made Russ and Chris realize instantly they’d found their man.

“Keith’s as seasoned as they come but what really excited us most was his excitement about Calgary and how aligned he was with our vision for this special place,” said Chris Prefontaine.

Leaders in Western Canada’s third wave coffee movement, the Prefontaines have long been supporters of direct trade, working closely with coffee farmers to know and understand where their product comes from.

Now they plan to take what they’ve learned and loved about coffee, and with Luce and his team’s help, apply that to bread and all the great things that go along with it. Small-production ancient grains. Local ingredients.  A fierce emphasis on freshness. And knowing who makes your bread and food. Knowing their name, their story and why they believe in what they do.

“It’s an Old World approach, but with a fresh new energy,” said Luce. “The Corbeaux experience will begin with respect for ingredients and technique, but ultimately it’s about going back to the basics and creating a community bakehouse that brings people together in the heart of the City,” he said.

Rwanda COOPAC - Fair Trade Coffee

Fratello has a new coffee from Rwanda which we are excited to introduce.  We have been hoping to roast a coffee from Rwanda for a few years now; however, every sample we would receive would never delight us in a way that would make us want to offer it to you.  Often after careful analyzation we would find off flavors or defects which would make it impossible for us to stand behind that coffee.

Rwanda COOPAC Fair Trade gives you a sweet whiney aroma, with a long lingering grapefruit acidity.  Mild toffee & milk chocolate flavours finish with a crisp mouthfeel.   This is a Fully Washed process coffee which mixes the varietals Bourbon and Mayaguez which were grown at an elevation of 1500-2000 meters in the Rutsiro & Rubava Districts in the Western Province near Gisenyi.
